  1. Put salt in the fish and deep fry it until golden brown then set aside.
  2. In another pan saute ginger, garlic, onion, tomato, then put the pineapple tidbits.
  3. Put the pineapple juice together with the soy sauce, brown sugar, ketchup, and add water (if it is too dry) then keep stirring.
  4. Bring to boil, then add the bell pepper strips. Season with salt and pepper.
  5. If you want a thick sauce, add the cornstarch.
  6. In a large serving dish mix the fish with the sauce..
  7. The end! Serve with white rice 🍚.
